Meet the Team: Carol Wormald

From the time my father retired from active military duty, I was raised in Dallas, Texas. I studied German, Latin and Greek at the University ofCarol Wormald Texas in Arlington, and worked as a high school Latin teacher before I married my husband and moved to the North Island of  New Zealand in 1998. In 2007 we relocated to  Queensland. 

I’ve always had a love of all things old, and old fashioned, and the books about pioneer life were my favourites when I was growing up. I became interested in heritage cooking skills while in New Zealand, and  those interests led me to the rare breeds. Part of the reason we relocated to Australia was so I could have a   house cow and chickens. I acquired a Dexter cow, and began making cheese and all the other dairy products.  The cow project blossomed into the heritage turkey project, and most recently the Chinese goose project.  

I’m passionate about the rare breeds because I believe  they offer traditional and nutritionally dense products  which complement most of the heritage food skills like  cheese making, curing, and fermenting.
